Dreams are a side effect of our brains forming permanent memories. Less complex animals such as reptiles do not dream; their forebrains are wired to make permanent memories immediately.
Mammal brains, however, are far more complex and would need immense forebrains to pull off the same trick. So instead, we save the memories of the day in a sort of temporary buffer, and then when we sleep, our brains sort through the memories in reverse order and "associate" them with what we already know.
The association process triggers the parts of our brains that access memories that we already have, and our unconscious minds try to make sense of the random triggered memories and weave them into a story.
The temporary buffer we have our experiences in retrieves the last thing we did first, like a laundry hamper. That is why the last thing we do, watch, or read often influences our dreams strongly.

Dreams are surely about the underlying meaning of things we don't consider much in our real lives. I think the good ones mean we're doing something right and the bad ones mean we're doing someone wrong. Note how a good day results in an awesome dream, and an anxious day in a terrifying dream.

Dreams are a way of our brain sorting through the days events while we sleep. Discarding some information and storing other information. Some things need to be dealt with by our subconsious while we sleep, they appear to us in our dreams, the significant information sometimes coming across as symbols that are relavent to us.

probably our subconscious mind at work. Freud made a big deal of dreams, but has been largely discredited. They express our fears and desires conscious or suppressed.
