like for example being a celebrity or famous. would it make sense to work really hard at one thing but have 1% chance of getting the success you desire at this one thing. or do you think you should be more realistic and down to earth?

It's fine to do that, otherwise you'd probably get nowhere in life.....however, you should always have a few more down to earth ones as back-up in the probably likely event the big ones don't succeed.

Go ahead and try for the big goals in life. But also set yourself a timetable or some guidelines for measuring success and failure so that you can recognize when you're not making any headway and it's time to move on to plan B.

There's nothing wrong with trying and failing. You even learn some good things from it. I drifted and tried out a lot of different things from age 17 to 32 and didn't get through college and buckle down to a real career until age 37. I don't have any regrets. I made up for the lost time in my career with the additional maturity and experience and ended up on top.

Life's long, and there's plenty of time to fail a few times over. Failure is good for the soul. It helps you figure out your priorities. But it's important to know when it's time to cut your losses and move on. You don't want to overcommit to a lost cause. If you haven't made a lot of headway by age 40, then it's probably time to grow up and join the rat race. Gotta have that nice pension and health benefits locked in by retirement age.

Dreams motivate us to live with enthusiasm and energy. Without goals, or ambition, it's easy to get caught up in other people's plans...like working a job you really hate. Without a clear sense of purpose you risk becoming a slave to someone else's purpose.
IF you only have 1% chance of getting what you want out of life, then maybe you lack the resources to realistically attain it. Like winning the lottery.
There is no good or bad in having dreams, even if they're fantastically impossible, or just sick and twisted.

Before you set out to do anything, be aware of the positives and negatives. If you can sit down and honestly write a list of those aspects, you're on your way. Now you must choose if you can live with those results, for example, foregoing college to pursue a career in the circus. If you don't make it in the circus you may have to take on a lesser paying gig than if you would have gone to college.

I believe in following your dreams. But prepare for and be adult enough to deal with everything.
