If we lived in a world without color and in a dream you
found yourself laying a field looking at a big blue
open sky, how would you explain this dream to people
when you wake up?

You could always use the word "indescribable" and hope that people actually believe what you say. Unfortunately, it seems that the term is often misused (like how "impossible" is often used where "unlikely" would be more appropriate), so that might not exactly convey the idea.

You could also try comparing it to a feeling. For example, what are the feelings you experienced in the dream? Are they feelings that others in the colorless world experience also? If so, tell them of your feelings.
