Furi Kuri or Fooly Cooly in western areas has a guy playing a guitar. The 6 episode stint is actually full of random scenes... but it has guitars!
Another anime would be Kacho Oji or the so-called "Hard Rock Save the Space." or dubbed "Oji the Section Chief." This anime is a sci-fi series wherein an old rock band reunites to play again in order to save the galaxy from evil invaders. They play their tunes to power up a huge cannon. And yes, the songs are cool
