Here are a few I really like:

- The three-part "Piano Sonatina," aka - "Sonatine" by Maurice Ravel

- The three-part "Trois Gymnopedies" (especially "Gymnopedie #1") by Erik Satie

- "Carnaval des Animaux," aka - "Carnival of the Animals" (especially "Aquarium") and "Danse Macabre" by Camille Saint-Saens

Well Mozart is the King of Classical Music. Debussy is great and hmmm Johann Strauss II.

I have a great fondness for Pachelbel's Canon in D. It's funny how often a very similar musical progression ends up in popular music, as well. Case in point, listen to Canon in D, then listen to Blues Traveler's "Hook" It's the hook that brings you back. :-)
