Specifically, Playstation or PS2. No Final Fantasy, or Kingdom hearts. Also already played Elderscrolls. I'm mostly interested in a good story and fun gameplay.

The Castlevania series of video games are very good and there are 4 of them for the video game systems that you are asking about:
for PlayStation:
1. Castlevania: Symphony of the Night
2. Castlevania: Chronicles
For PlayStation2:
1. Castlevania: Lament of Innocence
2. Castlevania: Curse of Darkness
All of these games are very good, especially Curse of Darkness, especially with the story and also the fun gameplay, in my opinion.

If you've ruled out Kingdom Hearts and Final Fantasy, that cuts the stock a little bit. Try Shadow Hearts: Covenent or Shadow Hearts: From the New World. At least I think that is what they are called.
Because I'm bored, if you have a high end gaming computer, you shouldpick up Elder Scrolls Oblivion.

Try the Shin Megami Tensei Series. For the PS2 there is Nocturne, Digital Devil Saga and Digital Devil Saga 2. It has a pretty good story. Very unique art style and decent gameplay.

For Gamecube, I would say Paper Mario 2: the thousand year door, im playing it now and is great, not only do you have the main adventure, but there are hundreads of side adventures to, so the game never ends
For Playstation 2, I would recommend this game called Crimson Sea 2. I beat it recently and its pretty cool

i'm not a final fantasy or kingdom hearts fan either, i found what i think is the best rpg game ever! it's old but hey who cares? it's called chrono cross for the playstation, the fighting is a bit confusing at first but the tutorial helps alot.
