Quarter sawed white oak would be attractive. Some people can't get enough of cherry. Maple would give it a lighter color.
What kind of wood is the dresser or nightstand? I would stay away from softwoods, ie. Mahogany, Pine.
I don't like working with woods that are too hard either, ie. teak epay.
A sleigh bed is going to eat up a lot of bf (board feet), so availability may be an issue. You want the wood to "match", grain, and color characteristics.
