The same reason she digs her fingernails in your back, if you're on top. The same reason she pins your hands to the bed, if she's on top. The same reason she squeezes the life out of the pillow, if she's on her hands and knees.
Plus, when that happens, that...umm...area...becomes very sensitive, much like yours does after an attentive tongue. It's almost like "I can't take any more!...don't stop!"
