Does it take years of on the job experience or just classes you take to learn more about fixing cars? I've heard both. Which is true, if either?

Both the education and continuing education to know the theory as well as the hands on experience of actually fixing them.

But most Master mechanic descriptions rely on the ASE test in passing the 8 areas required to be a ASE Master mechanic (basically manual and automatic transmissions (2),engine repair, engine performance, electrical,a/c, brakes, and stearing and suspension) .. some can get out of trade school and pass the test, some with 30 years can never pass it...

But have been ASE master now for 14 years

It takes both, theory, and practice. Look in your area for info on becoming an ASE certified mechanic, there's probably some shops in your area that would be willing to work with you maybe even sponsor you if you're serious about it...

A "Master Tech" is an A.S.E. certified mechanic who has taken and passed all 8 levels of required certification. And every 5 years retesting is required to maintain that certification. I have been one for 11 years.

Some people are just good at fixing cars , comes from exsperience,.....practice,practice practice, if you really like being a mechanic then it must be your call in Life .God bless !
