They know what kind of molecules elicit certain scents, so they simply mix various chemicals to create the scent the manufacturer is looking for.
Lard is processed pork fat. For home cooking, you can buy it in a can. It is good for deep frying things.

Lard is fat ... normally pig fat.
If the perfume is made using an enfleurage process, where the fat is used as a selective solvent for concentrating the scent from flowers (esp rose petals - rose "concrete" or attar of rose) then it could be a carry over from the perfumery process or it could be added as a carrier/fixative.

in old day's perfume was made from selected scents, and whale musk, lard is pig fat that has been rendered, melted in a steam kettle.
