Not totally sure that the Ph in milk is related. But think of a hot air balloon. The molecules in the air when the air is heated becomes more sparce per square unit, separated, and very active...needing more room to bounce around. The cooler, more dense molecules settle below that heated air (at the bottom) and calm themselves....hence the term "chill!" This factor applies to a lot of things... primarily to things with oxygen.
