Just wondering because they are always bringning them up on cop shows and getting ppl with um..

A lot of IM programs tend to keep logs or archives of your conversations if you don't disable this feature. The IM software is simply creating a text file on your hard drive which even if you delete, can be retrieved like Martin S stated. If you defragment or use your hard drive enough though, the data will eventually be overwritten in which case it will no longer be recoverable.

No. Not really. Their is a cache memory that can be used to store entered data but to really record keystrokes you need to install a keylogger. You should never pay for a software keylogger if you want one for several reasons. First they are fairly easy to produce and second many hackers have already created a bunch for you. Used a lot in security for the consumer market.

No, it doesn't. When you "erase" data from your hard drive, all you really do is erase the file that your hard drive uses to find data in it's "library of file locations" so the data itself is still recorded on the hard drive. But if you optimize your drive then it takes all of the blank spaces and writes over them with new information so that the files that you "erased" are actually written over on the media and not just erased from the library file on the hard drive that tells your computer what is available and where to look on the drive for it.

if your computer is infected with any kind of spyware, adware, virus, or keylogger then yes, your every keystorke is recorded and sent to hacker.
