I prefer off the menu for several reasons. First I can't eat that much to begin with so buffet is not worth my money. At least if I get off the menu I can take home my leftovers so it's 2 meals for me. I worked in a chinese restaurant when I first got out of high school and I think that the food on the buffet table sometimes sits for too long and may not always be fresh. If you order from the menu you can special order, like no green onions in your chicken fried rice and they make it fresh for you and that's another major factor for me.

I am no longer a buffet person - several reasons:
1) I am sort of a germaphobe, so the idea of food sitting out there for lots of people to grab kinda makes me sick.
(sneeze guards are even worse - like a spray particle from someone's sneeze won't fly into the food below?)
1a) I had a funny incident in Turks & Caicos. I was at the Beaches resort with family and I approached a lunch buffet dessert table one day. What did I find?
A child, who was shorter than the table, stretching his arm as high as he could go so that he could scrape some of the icing off of the cake slices. I wouldn't have noticed him if a couple sitting nearby hadn't been giggling and pointing.
I could have eaten one of those contaminated pieces!!!
2) The food may not be that fresh - it's been sitting out for a while - not right out of the oven.
3) I had buffet lunches every single day for 20 days while in Thailand (not Chinese, I know), but I was so sick of IT!!!!
I don't want to see another buffet in my life...
Off the menu - at least I can't see what was done to the food in the kitchen.

It depends on how hungry I am, and whether I'm familiar with the place. Some Chinese buffets, I wouldn't let my dog eat at. There's a place where I live that charges 15 bucks for their buffet, and everything I've ever had on it that was supposed to be hot, was cold, and the cold items were warm.
I lean more towards the menu, when I do Chinese.

depends on the type of restaurant. if i can get a large quantity off the menu for a low price (obviously won't be as cheap as a buffett), that would be my choice....food will be more fresh when you order off the menu, and there is less chance for the food to spoil
if money is an option, and you are very hungry (hungry enough that you would want a buffet), I would still order off the menu but choose a meat dish that is made with a lot of sauce (since the sauce will most likely stuff you more quickly).

If you want to enjoy good food, quantity is not a good suggestion. You should go for quality ie a-la-carte.
If you are watching your weight, then go for off the menu.
If you are looking to stretch that dollar, then stuff as much as you can off the buffet table.
Personally, home cooked food is the best. You can dish up anything you like for less cost. Its more loving and warm to eat home cooked food with family and friends.

It has to be off the menu for me. Nothing else will do. I don't do buffets in general. Why? Just think of it, all the hands that have touched those serving spoons. And, what have those hands been doing? I know, I'm a psycho, right?

I prefer to order off of the menu, because either way I am going to eat way too much. And you may as well have some to take home with you, since they frown upon that when you order the buffet.

Totally depends on the restaurant. I have a friend who has probably been to every Chinese food restaurant around and he lets me know what to eat where. We have our favorite buffets and our favorite off the menu only Chinese food restaurants.
