I am no woman, but I study them regularly. To answer your question I think that that behavior is an attempt at having a few positive selling points for the guy they're with. To illustrate my point, she might be thinking that eating a cheep and deceptively light salad will make the man think:
1. I'm not a fat person, nor will I become one, because I eat salads OR I am kinda chubby (or really bouncy) but I'll get better cause I'll eat salads all the time
2. I'm not a gold digger. I got a cheap salad.
3. I'm terrified of what you'll think of me while I'm eating. What if I slurp or something. No, no, no I'm going to have a neat crispy salad that I can eat in small bites so you don't think I'm some kinda pig.
Unfortunately the woman typically ends up just confusing the dude and inspiring him to write questions like yours on the Internet. On the flip side if she was a tubby cow who slobbed a bunch of Olive Garden noodles all down her shirt, and asked for what was left in your wallet after she order 3 courses and dessert would you call her back? I think not...

I am a female, and I do not always order a salad when I go out. I did not do it when I was dating, have not done it since I have been married. I guess I am lucky, I have not fallen into whatever pressure is on the world men and women to be a certain weight, which is generally much to thin to be healthy. I am in good health, about 15 pounds "overweight" for my height, and am now in the process of teaching my granddaughter not to fall into the food choice game. I don't think that single women think that they are "allowed" to eat; they are supposed to only eat salad and play up the fact that they are being "good" and "ladylike" even if they are so weak from hunger, that they could pass out at any moment. I know many women who act like this and my motto is, you only live this life once, why be miserable and starving???! I love to cook also, I married into an Italian family and eating is a big social event. My adult children still ask if they can bring friends over to visit when I'm making the traditional homemade sauces and meatballs etc. You need to find a girl who enjoys eating out with you. That way you can have an enjoyable meal yourself and not worry about her passing out, because she is eating like a bird. Good luck to you!

Because when a woman i looking at menu she is often times not only considering what may taste good, but also what effects what she eats will have on the rest of the night. (ie is it going interfere with any potential physical activities later, will it give her breathe a funny smell, can she still look attractive while eating, etc. etc. etc. ). The purpose of a Dinner date for a woman especially earlier on in a relationship, is more DATE than dinner, the dinner is more of just an excuse to sit and talk with that person. As the relationships wears on though, you notice how they can and will start tearing back some food, and a dinner date actually becomes more about the dinner.

You know what pisses me off? You didn't do it, but lots of people do, and I thought I'd take this moment to preach to the masses.
How come just because I'm a vegetarian, people always think I'm gonna order a freakin salad! I'm a growin girl, I don't want no SALAD! My teacher took the class to McDonald's, she's like 'Oh, don't worry, they have lots of SALADS.' I HAVE NEVER HAD A FREAKIN SALAD AT MCDONALD'S AND I NEVER FREAKIN WILL. I can get fries, an apple pie, a parfait, a milkshake, a fish fillet, or plenty of other stuff! How come when you take any other person out to McDonald's, you ASSUME they want fries, but when it's me you overlook the fries (and everything else on the menu) and say I want a salad cuz I'm a VEGETARIAN!! A POTATO IS NOT A FREAKIN ANIMAL!! Sheesh, I know you people mean well, but do you think I've never been to a freakin McDonald's??? I know what I'm gonna freakin order!!! I DON'T NEED A FREAKIN BABYSITTER OR A FREAKIN SALAD!!! AAAAAAA!!!!

I almost always order a salad when I go out because restaurant salads taste a lot better than the ones I make and because when I eat in public with others it is easier to enjoy the conversation when I don't have to worry about eating finger food.
I have to warn you, though, that some women eat salads when they're dating so that just in case you are potential marriage material, you will think they are health-conscious and will never get fat. Sad but true.

A salad is a safe bet for most girls because it is:
1. Cheap
2. Won't make you feel full or sick
3. Tastes good
Unfortunately, I have the table manners of a maggot. I eat very sloppily and of the girls I have eaten with, they are quick to see that I really don't give the slightest **** about table manners. The only girl brave enough to go out with me on more than one date ordered a basket of chicken fingers on the first date and then I believe french toast the second date. We've been together since :)

Well, personally on first dates I am usually nervous so I do not eat that much because I do not have much of an appetite. However, I never order a salad because I am too afraid that it will get stuck in my teeth! I also am not like the typical woman, I tend to eat whatever I want and a lot of it whereas a lot of my girlfriends eat hardly anything to maintain the Nicole Richie look..

There are two major reasons, for me anyway:
Have you ever seen the looks that are given to any woman in a restaurant who has a healthy appetite and orders and decently sized meal?? I have and on a date I will order salad instead of what I really want - to avoid the dirty looks and embarassing comments.
If I don't know the man very well and I think he might ask me to pay or go halves, if I order salad then I won't need to spend too much, especially if I don't have very much with me.

women don't always order salads. Maybe you are dating the wrong women. It seems to me the women who only order salads are fake or vegetarians.
You need to go out with a real women. If when you ask women out you only look for those with supermodel bodies then they will most likely also to be the type who won't eat in front of you so they will appear perfect or they are afraid if they eat in front of you then you will think they will get fat and not like them.

If I order a salad and nothing else than that means I want the date to hurry up and end. But for the most part we are concerned about our health. If a salad comes with the meal, we might order something else to go with it even if we plan to eat it or not. You can look at it in more than one way:
1.) concerned about her health
2.) she might me a vegetarian
3.) bored to pieces with the date (being picky with the salad)
4.) trying to prevent her date from spending so much money
