You absolutely can boil ultra pure water. The difference is ultra pure water is demineralized. If there are no minerals in the water it is a more active solvent. Much of the alka seltzer is dissolved in the water and does not react as if the sodium and calcium ions were present.

probably beacause it dosen't have any imperfections. That's y you can't boil bottled or purified water.
