Graphical User Interface. This is as opposed to those lame text-based applications, which we used to use in mainframes, and junk, I think.
You may also hear WYSIWYG, which basically reflects: "What you see is what you get" functionality in an editor, like MS Word.

programs like windows interact with the user using visual elements like windows, cursors etc. They are said to employ GUI.
Other programs like C/ C++ only interact with bare text, they dont employ GUI.
