to put down for a deposit at a hotel if you are paying in cash and don't have a credit card?

Usually it is the maximum rate of the room plus the actual rate. You get the difference back when you check out.

BTW, you can get a credit card, use it to check in, then pay cash. I did this throughout college when I commuted. Never left the charge on the card and paid cash. Even though they got to know me by name and gave me my preferred room automatically (it was in back and I was the only one that stayed in the back) they always imprinted my card every night I stayed even when I paid cash the next morning. They also checked my drivers license every time I checked in as well. Hotels are strange.

If I was a hotel owner my policy would be whatever one night would cost and I'd have a strict cancellation policy.
