If you didnt clean and set them up for your motor it aint going to work.popping is lean mix, air leak etc.
bogging may be same or too rich on a different circuit.
you need to join a forum where you can find someone to talk you through carb setting/repair. dont know if there is a vintage Kawasaki site? do a search

Did you go bigger? Maybe too rich? did you balance them? Are you sure you got all hoses hooked up right, and carbs tight to heads...

You carbs are not adjusted properly
Each one needs to be set for fuel/air ratio.
Then they need to be syncronized.
