Plenty - the everyday ones or festive ones.
For Christmas Eve supper (the most official and celebrated gathering during Christmas) we eat 9 to13 (it has to be odd number) traditional dishes which are prepared only once in the year - for this occasion. They are all vegetarian, no meat except of fish. My favorite of them are little dumplings with wild mushroom filling in a clear beetroot soup. In Polish "barszcz z uszkami", translated as a "soup with little ears"

From the traditional dishes still commonly served across the country I would chose "bigos". It's a stew made of sour cabbage, different kinds of meat (the wider variety the better), wild mushrooms, some spices and wine - but the wine might be rather latest addition. You cook it for a long time together, it taste better with every reheating. This particular cooking process got bigos into trouble with European Union regulations. According to them no food could be served to the public after so many reheatings. The wise heads came with the solution - the bigos is not ready before it has been reheated 7 times.
I know it doesn't sound appealing, but this dish taste truly delicious.

We have few shocking ones, but they are rarely eaten these days - like the soup made of fresh blood. I don't think you want to hear it. I avoid them. I swear ;)

We have no true national cuisine in Canada.
I don't know that many people who have eaten moose meat(I have but I am from the maritimes where it's less densely populated)
I think that the only dish that we can truly call our own is the regrettable poutine that was invented in Quebec. Oh and we have more donut shops than the US but a smaller population.

I'm Canadian, always have been, but don't ask me! Tim Horton's doughnuts? IKEA meatballs? Tandoori chicken (in about 100 years)??

If I went to the province of Quebec, I'd have tortière (a kind of meat pie) and tarte au sucre (thin pie crust baked with maple syrup on top), and but a national dish?? I suppose whatever they serve at hockey arenas, so - hot dogs and warm beer!

The crust makes it heavenly...It is a very flaky, and buttery crust (crust is on bottom and top) filled with a mixture of ground beef, sweet onions (not too much thought:), rice, and other secret indgredients especially from Finland...It is often dipped in a hot liquid very similar to au jus or sipmly dipped in ketchup...You can't even begin to imagine the flavor of it...all my fellow Americans have fallen in love with it...First they ususally ask, what the hell is this? And then the aroma and taste instantly get them...It's unlike any other food.

russian- as long as it has caramelized onions and sourcream....just kinding i would have to say borsch ( is that how you spell it in english?
but seriously most of our recipes start with carmelized onions and garnishing it with sourcream! hope this is what you were looking for!

p.s. dont try the borsch from a can because its nothing like the real thing! just for your fyi =0)
