Mutilation of the body at or after death is, in many cultures, considered a way of disabling the victim's soul - of preventing him from entering the afterlife. The head...the face...is who we ARE.

Beheading isn't exclusive to Arabs.

The ancient Celts also practiced beheading, but with a different purpose in mind. When they killed an opponent during combat, they would take the head and keep it as an honored symbol, both of their victim's skill and bravery, and of their own heroic deed in vanquishing him.

In other words...when they sat around the fire at night and got drunk, they'd drag out their collection of pickled-in-honey heads and lie wildly about their victory!

You've asked and possibly answered a great question. I think that they behead their captives to shock the world and show how powerful they can be against their enemies. Modern warfare has truly made it easy to fight a battle and not have direct contact with the enemy (planes, bombs, missile launchers, etc.) These terrorists are still living in past times and choose to use antiquated weapons. Their beheadings don't scare me, they just make me more supportive of our war efforts.
