Depends on the shippers policy, and whether or not they have specific instruction to leave or not to leave.
Generally speaking FedEx will not leave it unless you so instruct. UPS may or may not.
No shipper will leave a package, if your signature is required to confirm delivery.

It depends on what shipping company is used, and where you live. If you live in a house and they can leave a package in an inconspicuous place, the delivery person may leave the package. If delivery requires a signature, most shipping companies will leave a notice, but not the package when no one is home to sign. Most companies will make up to three attempts to deliver. Most companies will hold a package for pick up. Just contact them when you get the delivery notice.
Alternatives:
If you are at work during the day, you may want to ship things to your work address.
UPS will let you use a local UPS facility address and you can pick it up there. Talk to them about this.
Have your package sent to a relative or friend who is home during the day.

It depends on where you are getting it from. Most will not leave it because you have to sign for it. If you have a tracking number look it up and it will tell you the date and time it will be delivered

I would think they would not want to be liable for not getting it to you, so the compnay you bought it from would ask for signature request. The shipping company wouldn't know better since they do not know what is inside the package.
