My picks in order of brutality:
#2: DBZ (really great fights, but too much talking in between punches)
#1: Yu Yu Hakusho (way more blood and guts, and not so much conversation)

Mahou Shoujo: Sailor Moon, Tokyo Mew Mew
Ninja: Naruto
Just fights: DBZ
Mech/Technology: Evangelion (sp/ZOMG TEH REI), Fullmetal Alchemist (sp?), Gundam, Sonic X (What, GUN looks tech)

Fullmetal Alchemist and Ghost in the Shell are the Best
The Dragon Ball serials are fun but they take forever to get through Even one single fight

DBZ has a whole bunch of good fights and so does Naruto. Neon Genesis Evangelion has good fights but they're not really hand to hand combat.

Naruto has good fights, but only when rock lee is fighting. full metal alchemist has good fights, but i have only read the manga. Dbz is good, but there are too many Ki blasts. that show with the samurai is good( with the red hair)

If you want fights try Grappler Baki its like Van Dames movie Blood Sport cross with WWE but with power moves and it realy rocks now if you want Mafia type fights try GunGrave if your into blood and guts try Berserk or Hellsing

Fruits basket! (haha if u like the one on one duels! mainly Yuki vs. Kyo except Yuki ALWAYS WINS, Kyo vs. Kagura, Kyo vs. Bears, Kyo vs. Haru, Uo/Hana vs Fan club girls, Yuki/Kyo vs. Shigure(okay Kyo and Yuki punch Shigure several times...) AND hiro verbally attacks everybody.
Full Metal Panic(explosions, AS fights, Kana vs Sousuke,)
Full Metal Panic the second raid (AS battles and a lot of Kaname's beating of Sousuke)
Full Metal Panic Fumoffu (dirty fighting... u know tossing grenades in a fist fight and then punching guys in the place where it hurts most or using Shot guns with rubber bullets or using the fire extinguisher... not beating with it but using the gas!!! Bonta-kun traing)
