You've got a lot of questions here.... Can God choose?
Choose what? Good or bad? Sure. He chooses good. If there is free will, it is for everyone.
There are only two choices- hmmm. Uh- No. There are myriads of shades of gray and mixing of good and bad.
A good man is a dead man. - So says many religions, in which the end game is to be with God. Likewise, so would many cynics, who don't see anything particularly redemptive in humanity. AHA! Something they can agree upon. Beautiful.
Is God death? You mean as in "life with God, is what you can expect upon dying?" Sure. Is he actually death? No.
If he can't choose? You mean between prolonging your natural life or watching nature take it's course? I think he can choose- the conditions just have to be very specific and we don't know what they are.

If god knows all then he knows you will sin, hence your destination after life would be already known.
