There is nothing weird about your dog, perfectly normal instinctive behaviour. It stems back from the days when dogs were living in the wild, they would dig a hole to pass poo, then cover it up to also cover up the traces of their scent .They will also bury food or bones etc,( not in the same hole) to leave a bit of food for when they are really hungry, more common in females because of the need to feed a litter

He is a cat, or a very nice dog. Just be happy about it, and don't call it weird. You might have to take it for walks with a plastic bag.

Dogs also roll themselves in horse shite to disguise their scent.
