A state is a self governing entity. A country is a geographic area with defined and recognized borders.
The reason israel is not called a country is purely political.
Israel recognizes its borders as including the west bank and Gaza strip, the rest of the world recognizes the borders as those existing before the 1967 war - n\in otehr words, not including the west bank and Gaza Strip.
In the US they use the term State to define Israel for purely political reasons. To call them a country would be to recognize the borders and then the U.S, would have to state which borders.
By calling them a State, the U.S. government does not have to officially recognize any borders and therefore maintains an image of neutrality (atleast concerning borders)

State is the technical term for a governmental body. The United States is technically a federation of states, meaning that one ubergovernment controls all activity between otherwise self-governing bodies.
Nation means a group of people. The "Jewish Nation" is a phrase that means "all jewish people."
Not sure why it's not called a country.

The guy above me got it. State as we americans use it is politically incorrect, as a state is an independant self-governed body. a nation is a group of people with a similar culture and a country is an area with determined political boundaries.
