Has anyone taken the baffles out of the exhaust. If so how is the sound and does it change the performance?

When you change the back pressure on the exust all you well do is make it lounder but most likly take away the performce to do it write perchace a header and re jet the fuel system its more hassel but you well be happer in the long run..

Had one with the same problem, the mech said he would Punch out the baffles, but I hated the stock look. I got some cobras and had him keep the baffles...it was kick *ss. It was loud..maybe a titch obnoxious, but worth the $. Make sure you put the jet kit in bcuz the mech said that I didn't need one and it ran too rich...and my pipes blued. I am sure that it changed the performance to the better side of the spectrum. Could be wrong, but I noticed the difference right away. Another thing I learned was to get the pipe in pipe, a bit higher in price, but my husband's are still as beautiful as when he got them...life time no blue.

It will definitely modify performance if you don't re-jet the carbs (or have the dealership do it after you modify the exhaust). Any change to the exhaust on a V-Star 650 will require the carbs to be re-jetted. I have the same bike and looked into it as well.
You may be better off getting pipes at the link below rather than messing with the stock pipes:

good bike but unfortuately with only a 650 engine it wont be too loud.
the cheapest way is to bash out the baffles with a peice of rebar or something.
also DD makes a great pair of slip on pipes that can be installed in like 20 minutes.

Sounds rotten on a Yamaha. If you want better sound just buy a new Vance & HInes Pipe for the best performance

I've ridden for almost 20 years and I have to say most people think loud pipes are really annoying...so just be happy with what you have. BTW, I currently ride a V-Star Silverado 1100

the loudest engines(and most annoying) are not the largest they are unsilenced model aircraft at about 25~30cc
