You are assuming that we talk about the same things with everyone we meet. Personally, the things that I consider defining of who I am rarely enter into casual conversation. However, if were were to point the question toward those things we talk about with our closest mates, our families and with ourselves (in our own mind or in a journal), a clearer picture would begin to emerge. Clearer but still not necessarily completely honest.
In addition, we should consider that it is not just what we consciously say that defines us but the way we react, instinctively, both verbally and non verbally, that give deeper clues as to who we proclaim to be versus who we actually are.
Lastly, what does that say about us? That we naturally shelter our true selves from being revealed to all but a select few, if even to those. Actually, I would hazard that few people even know who they really are.

No, what we talk about does not define who we are, alone. Neither! It can never truly be used as a guise because what you do (like cover up) also tells something about one’s character.
People are complex; it will take more then just TALK to discover the person within.
;-)
So it says nothing much about us, what ever the other perceives it to mean is what they will take it as...
;-)

It depends on the particular social situation you are in at the moment. Upon a first meeting with another person, most "normal" people will try to put on their best in order to create a good impression, so to some degree this is not who they really are. Usually, once a person feels comfortable with themselves or with a situation, they will be more likely to discuss topics which will reflect their true beliefs. This is the case with me anyway!

What we say only indicates what's inside our minds; even if its a guise for appearance; to fit in or gain.

I think it says something about our interest and stage of life at this time. It may indicate who we were in the past, but I don't know if it says much about who we will become.
Right now, I am interested in current events and parenting, for the most part. I suspect the interest in current events won't change with time, but the kinds of discussions I have about parenting will change as my children age.

I hope not because then people would think that I am a self-centered idiot who only thinks about sex and shoes. Usually when we talk to people it is small talk, so it can easily give someone the wrong impression. We try to talk about things that others can relate to. Example: women talk about shoes and men talk about sports. Just something to get conversation rolling.

Sure. You can learn a lot about someone from reading their Q&A... Usually, you can spot the jackasses who are on here for whatever sorry reason...I try to stay away from those...But I've chatted with some wonderful people on this site..The idiots are to be ignored...and you know who you are...
