Has to be "Your Song". It was the song that catapulted him to stardom after John Lennon mentioned that was what he was listening to when interviewed on American Radio.
Interestingly, when he was an unknown he auditioned as the lead singer for King Crimson (Robert Fripp's amazing Prog-Rock Band). They didn't think he suited their style, how right they were!!!
