Hop Sing was the Cartwright family cook and he was played by Victor Sen Yung who really was an accomplished Cantonese cook. He wrote the cookbook "Great Wok Cookbook". Going back even further, he played Charlie Chan's Number Two Son in 11 of the Charlie Chan movies.

you are the last of a dying bred if you are still watching reruns of Bonanza. Their all dead. The cast, the crew, even the horses are all dead. I don't recall the cook's name, but he did go with Loren Greene to Battle Star Galactica--the cook wore a silver metallic costume and had flashing eyes. He still couldn't speak any English.
