Something easy well let me tell you the easiest and YET tastiest way to cook Chicken.

You'll need

2 large chicken breast boneless
1 bag or what not of Wild Long Graine Rice with Vegetable's
2 can's of Campbell's Cream of Mushroom Soup

Place the chicken breast into a large deep PAN not a POT and put one or two can's of Campbell's Cream of Mushroom soup in with it. The Mushroom soup will actually cook the chicken place it on medium for say 30 minutes turning once or twice then cover.

Place on LOW heat while you cook the rice. (You may see red blood like swirls in the mushroom soup when you start dont' worry this is nothing to be alarmed of it's perfectly natural)

Boil the rice after the chicken has been cookin for 30 minutes.

Take the Chicken out place it on the plate, put the rice next to the chicken and then pour the rest of the mushroom soup that you used to cook the chicken with over the chicken and rice.

The chicken will be so MOIST and it's so EASY to cook.

Don't' forget to turn the chicken once or twice and stir the mushroom soup while it's in the pan with the chicken.

Good luck and Bonn A petite.

Start with a simple green salad, your supermarket should have some prewashed spring mix greens. Choose a light vinaigrette dressing.

Pan seared pork tenderloin seasoned liberally with kosher salt and pepper would be fairly easy to prepare, remember to cook until 145F and let carry over until 150F serve with either mashed potatoes or baked fingerling potatoes (they're small and look like fingers). Choose a vegetable that your parents enjoy, baby carrots, asaparagus, beets, etc, be sure to use salt, pepper and butter.

A crisp white wine or a mellow red would pair well with the pork.

Dessert, I would serve a store purchased sorbet.

Or you could hire me to do this for you

How about an Italian theme? Get one of those red checkered tablecloths, some glass votives with candles scattered about the table, some nice romantic italian music, a pair of beautiful wine glasses with a nice rich, red wine...then serve seasoned garlic bread with spaghetti or some kind of linguini or other pasta. (usually pretty easy to make) Serve a fresh, garden salad with italian dressing, and top it all off with a slice of cheesecake. (Look out Martha Stuart...!)
