There is a checklist of field equipment in the (Australian National Antarctic Research Expeditions)ANARE Field Manual.

As for food, I usually dont recommend high sugar foods, but you can if you want go with energy bars but I usually dont spend more than 3 days eating them. I have not tried them myself but you can get meals ready to eat (MRE) over the internet or at Ebay, These are the same at the US Army uses but maybe near their expiration dates. They are high in calories but low in fiber.

In my opinion, what you need depends on where in Antarctic you go and when as "severe low temperatures vary with latitude, elevation, and distance from the ocean; East Antarctica is colder than West Antarctica because of its higher elevation; Antarctic Peninsula has the most moderate climate; higher temperatures occur in January along the coast and average slightly below freezing"

do check out with porfessional researchers who have been to such a cold climate what you will need.

the basics for any camping is

sufficient food for a longer period than you are expecting to be away. ie if going for a week take 10 days food.
the proper clothing for the climate. You will need to talk with people who have been camping and hiking in arctic or antarctic climates to ensure you do purchase the right clothes but top of the list will be spencer ( long sleeved singlet) and long johns that are made of the new materials available for extreme climates.
First Aid kit is always required and I would add that triangular bandages are the most useful items in a first aid kit as they can be used for many purposes. from a simple bandage to a pad for a dressing a wound, to a sling...
your extremities are at extreme risk of frost bite so keeping your fingers, toes, ears and nose warm and dry will be of the utmost important.
You will need to speak with a dietician who is familair with the needs of arctic or antarctic expeditions. They will be able to offer you the healthiest and most sensible solutions to dietary questions.
