Yep... Cooking would be number one (which includes grease and hood fires.)

Actually it is the leading cause of all non-residential fires, restaurant or not.

That's why it is so important to have your hoods and ducts cleaned regularly by a company that takes before and after pictures from INSIDE the ducts and have the fire suppression system checked at least semi-annually.

Second leading cause in restaurant fires is fires related to heating.

Electrical fires are the single greatest cause of a fire that will destory a restaurant.

For normal day to day fires, then yes grease/fat/oil fires. But generally someone is always present and available to diffuse the fire and the situation.

If you ever have a grease fire cover it up with a metal lid
