I don't know if this would work well, I'm not to strong on graphics editing programs (I leave that to my brilliant wife), but I would convert the whole image to black and white and use a history brush to bring the parts you want in color back.

Cut the part you want to remain in color and paste it into a new layer. I believe there is an option called "Paste into new layer". Then in the layer menu make sure only the original layer is selected...and convert it to Grey Scale...it should leave the second layer you create un-changed.

I don't know that much about linux apps but try printing the image in B&W and then scan it or print it in color then scan it in B&W
