Where are you looking? I have found questions that are interesting to me in the forums that are interesting to me. Or if you see a problem, solve it yourself-ask questions you find interesting.
It also depends on time of day. When less people are on, the questions are limited, you have a better chance of an interesting question during peak times.

There are many interesting questions...
they just don't interest YOU !
I have seen, and answered quite a few questions I found very interesting, and a challenge to find the answer for the asker.

Not all. Some ask for their own purpose and others for fun. Just like asnwering some questions, they tent to answer it seriously and the others not. Just answer some questions to make your points increase and have fun.
