Album art work only sows on songs that you buy from iTunes. To get artwork on other songs just search for the image you want using google or something. Copy it, and paste it into the album artwork section found under the album information section. Sometimes the artwork is picky and doesn't want to be put into iTunes, to get around this paste it into any word processor, recopy it from there, and paste it into the artwork section. You can also paste the pic into the box that appears in the lower left hand corner of iTunes when a song without artwork is playing that says "drag artwork here" to get around having to open up the album info file all the time.

First, find the image that you would like to use for your album art (right click and copy the image...i usually look up the album on Amazon and copy the image from there). Then, right click on the song and select "get info". Next, click on the "artwork" tab. Then, simply paste the image into the white box.

Click "Ok" and you are done! :)

Make sure you have the artwork first for each song by dragging it into the window on the bottom left corner.

It's probally because you didn't buy it on itunes so it doesn't know what the album looks like.
