What if you don't chat regularly, is it better to not say anything when you see her in the morning (since it kind of seems like a "mechanical" greeting)?

Well I am a receptionist and whether I chat with everyone or not I do appreciate who ever comes it to say hello. Just acknowledging their exsistence may actually make them have a better day.

Only greet the receptionist every morning, if you want to be thought of, as a polite and respectful individual.
If you don't care what people think of you, and you are a rude and uncaring person, then say nothing, when you see the receptionist.
It's all completely up to you, the type of person you are, and how you want others to think of you.

I always say good morning with a small comment of the weather, whet she is wearing, or something. She is a noce person.

Yes, it's simply polite to acknowledge that she exists and is performing a valuable service by being there.
