The salt will "suck" the moisture (viz. water) out of the snails sponge-like, semi-porous body. Salt dissolves readily in water, and at very fine scales what happens is that the sodium and chlorine ions break up and gravitate towards the dipole moments of the water molecules.

In turn, the water is attracted (by the electromagnetic force) to the ions, and the surface tension of the water (again, just a function of the water's dipole moments) draws along a stream of water molecules, out of the snail, and into a briney water-salt solution at the surface of the snail. Without water, the snail will quickly die.

Just imagine if someone suddenly sucked all the water out of your tissues and blood. Fortunately, as large organisms with a (relatively) tough and water-proof skin, the water in our bodies cannot be so easily had.

The sodium in the salt causes a chemical reaction with the snail's slime. Basically the salt is like an acid to the snail or slug causing the snail/slug to ooze while the salt is burning away their skin/slime. It is quite a torturesome act.

Because slugs and snails have no skin barrier, salt will draw the moisture out of the animal. Enough salt will kill them, producing a nasty, sticky mess.

Do you know ANYTHING?

It dries up because the salt draws moisture out of the snail/slug's skin.

Snails will 'melt' and turn into a soup for dinner or protein drink for between meals.
