the dust covers are giving me a lot of trouble im wondering if im missing something really important for the easy removal of these blasted rotors

If you have already removed the set screw that holds the rotors in place, spray the hubs with Liquid Wrench, (ask for it by name) and let it soak for a while. Go back and spray the hubs again. After letting them soak for a second time, hit the rotor with a hammer to break it loose from the hub. Hit the rotor from both sides (inside and outside) and if it does not break free, spray the hubs an additional time and repeat the hammering process.

you dont have to take off the dust covers to change the rotors. after you take the caliper off spray wd-40 or pb blaster(better choice) around all 5 of the wheel studs and around the axle nut in the center of the rotor. let it soak in for 5-10 minutes. then take a hammer and lightly tap the rotor from behind in a few different spots. the rotor should pop off easily
