I want to know if it is the architects responsibility to design the interior of retail space (ex. AE or Bath and Body Works).

If not who's responsibily:
interior designer
client

For a large project start up, all of those decisions are usually done by a committee of designers, architects, project managers, etc. based on the clients already set uniform designs or from the ground up based on numerous studies. The interior of retail spaces have been studied for eons and usually are arranged to have a particular response from the customers. At the very least, the design may be as a result to maximize the floor for optimum efficiency.

architect is the one who designs the building

The client who is the owner / or taken the space on lease has to appoint an interior designer so as to furnish the retail interior

An interior designer designs the interior of buildings. An architect usually just designs the buildings themselves.
