I know of one run through the University of Utah and Montana State. THe UofU digs mainly in southern Utah (Escalante-Grand Staircase NM). I am not 100% sure how to sign up, but you can follow the links below to contact the departments for more info.

National geographic has trips that volunteers can join.

The Bureau of Land Management, museums and universities also have volunteer programs.

If you said where you wanted to go and dig it may be easier to put you in touch with the local groups.

The University of Texas-Dallas, and I believe you can also try SMU. They're always digging up dinos.
