Plug in your ipod, open the new itunes...now click ur ipod it will show all the songs currently in your ipod.
Now select all songs(from edit->select all or click one song and press ctrl + a ).
Now click on the selected songs and drag and drop to your itunes library....
I thinks thats pretty much it, it will take all the songs from your ipod to ur local disk

Technically, you can't download from your ipod.

However, plug in your ipod, open the screen for that drive (My Computer and then drive F or whatever one it's plugged into), then go to Tools / Folder Options / View and in that list click on the "Show Hidden Folders" button. Then all your music will show up in a bunch of folders.

Yamipod is a program that will do this for you, for free, and it's fast, free and isn't such a hassle as compaired to getting your songs out of your iPod_Control folder organized in the F folders.
