The white stuff might just be plasma and white blood cells clotting the wound. BUt if you didn't wash it properly, it might be infected. I would say keep it clean (with an antiseptic wash) and covered with a band-aid (change every 6 hours or so), and if it doesn't seem to be getting better by tomorrow, call a doctor.

The white stuff's most probably the plasma from your blood, that leaks out from your capillaries as part of the inflammatory healing process. If it doesn't smell foul, or doesn't turn yellow or green, it's fine to leave it and allow it to heal on its own. It's white in colour because of the plasma, and the white blood cells that've accumulated there as a response to your body's natural inflammatory response. This aides healing, and the white blood cells help fight off infection. Just clean the cut by washing it with anti-bacterial soap, then cover it up with a water-proof dressing, and leave it till it heals up.
However, if it's foul smelling, yellowish or greenish, it's infected, and you should go have it checked out by your GP. If your knife was rusty, it's also advisable for you to go get a tetanus jab, to prevent getting tetanus.
Take care.

it might just be the acid from the apple intermingling with your blood, clean it real good and put a bandage ( i know you have already) if you don't experiance any signifigant pain or swelling in the next few days don't worry about it......do put some antibiotic cream on it.

if theres white stuff and its a deep cut... my dad works in a hospital, and i recomend that you go to a hospital and have them check it out, cause if its a deep cut you might need to get it glued.
