What person would know how a bird or mouse would taste? I don't think many people working for pet food companies sample their wares. We haven't gotten smart enough to ask the cats to tell us . I imagine the cat's just like fresh warm food and these are also fun to play with.

Mice are rodents. Rabbits are rodents.
Birds are birds... Obviously, and chickens are birds.
You will frequently find rabbit and bird flavour cat food; these animals are more conventionally farmed for food purposes.

It's all about marketing, my friend. Most cat owners are women who would be appalled at the thought of some poor little mouse or a cute little birdie going into their cat's gullet...LOL
