Get Final Fantasy Anthology and Final Fantasy Chronicles. They're PS1 updates of two of the best Final Fantasy games, IV and VI (2 and 3 in the US). Also on there are Final Fantasy V (with a fantastic job system), previously unreleased in the US, and one of the best non-Final Fantasy RPGs ever, Chrono Trigger. These are the classic games, the ones I got hooked on (as did so many others at that time). The stories, music, and gameplay are all fantastic, with very little clutter like you'll see in the next-generation (Playstation and on).
It's also hard not to recommend Final Fantasy VII. It's an amazing game, and there's a reason it's so popular - If you can't stand the older style graphics of the Super Nintendo era, this is the definitive game that has defined the last 10(ish) years of Final Fantasy.

Depends. There are really two different styles of game... pre-playstation and post-playstation. I'm assuming based on your name that you've played 7. I prefer the ones before the shift... American 2 and 3 are excellent, as is Japanese 6. I believe you can find all released as playable on the playstation, or you can hunt around for roms or whatever.
FF1 and Japanese 2 are arguably in a class of their own. If you're used to the smooth interfaces, crazy cutscenes and 3d graphics, you probably won't enjoy them... but this is where a fair bit of modern console RPGs comes from. If you have some time on your hands, I suggest getting and playing from 1 all the way up through the series.
If you must play one, and only one FF game, I say play American 2 (released here originally for the SNES, and not to be confused with Japanese 2). If you're playing roms, you might be interested in the hardtype... the original Japanese release of the game had two versions, one easy and one hard. The American version is a localized port of the easy version, but you may be able to find a translated rom of the hardtype, which would increase the challenge factor of the game.

It is all based on opinion, but I think that FF7 is the general favorite. Personally, my favorite is FF9, because of the amazing artwork and story.
