When you talk about convection, radiation, conduction; heat transfer and how heat behaves; like in thunderstorm formation, evaporation of heat through sweat and inversion layers; this is a type of study on heat physics.

What is the study known as, and where can I obtain, highly sophisticated scientific information on such?

thermodynamics (but it's a larger field than just heat propagation, so there might be things in there you don't care about)

you'll have to go see diferent fields too, like meteorology, if you want to know what happens in a thunderstorm.
If you get deep enough in science, you'll see that all topics are interelated in a way or an other, so you'll need some kind of general scientific background to understand the details.

This study is known as "heat transfer" and forms part of the undergraduate study of mechanical engineering. If you wish to know how heat interacts with matter then you are looking at 'thermodynamics". But I feel you require information about "Heat Transfer".

In heat tranfer we are interested in rates of heat tranfer, heat conductivity of materials, Temperature distributions or or profiles in a body and so on.
On the cutting edge of Heat Tranfer you model temperature distributions in a body using a tool called "Finite Element Analysis"
