Being psychic means that you use tricks (e.g, cold reading) to fool people into thinking that you have special powers. "Having a gift" simply means that you're sufficiently insensitive to the world that you have convinced yourself that you have special powers.

Having a gift is a catagory all it self, because their are many different gifts that people have, Being a psychic falls in the catagory of having a gift. So having psychic ability is a gift that a person could have.

People who say they have a gift believe it is from God. They believe that God aka a higher being has blessed them with what ever ability they claim to have.
People who say they are Psychic usually believe their abilities are just a part of a natural ability that everyone has. They believe some people may have a greater psychic ability than others. They also believe everyone can develop a psychic ability with the appropriate training.

Having a gift is a euphemistic term for having a powers like being psychic or being a spiritual healer.
The phrase "having a gift" could mean any number of paranormal abilities like mind reading, remote viewing, or even clairvoyance, healing powers or even something else.
Being psychic means that one has mental powers beyond normal abilities like, mind reading, remote viewing or something else, but these are only mental powers and not spiritual powers.

I am an audient sentient, mesage giver, pre-cognizent, a remote viewer, and have healed others, but it isn't me. It is God.
I am simply here, being love, and, then, He does His works. Most times others tell me what happened, as I am in a relaxed dream place far away, mentally, whenever it happens.
So, I think I am both, as some things that happen, I am there and remember a lot of it... and, it has been going on since I died, a baby, in an Army Hospital, and was revived, almost 60 years...

Psychic understanding are a recent, yet presents arent constantly psychic understanding. Being a psychic is particular, while being proficient is greater generalized. case in point, you're able to be proficient in math, or sciences. desire this helps :)

I agree with David but would add that intuitiveness is also a gift that is often overlooked.
