Go to the place were you will be interviewing for and see what other bartender are wearing and how they are wearing it.. Who ever hired them will what to have the same type of people.

It varies from bar to bar. Some are more upscale, others have uniforms or a style of dress.
I would suggest you visit the bar as a patron to see what it's like. Focus on how their bartenders dress, and that gives you an idea as to how you should dress.
By dressing the way their current bartenders do, you'll be showing that you did your homework and would really fit in with their "style."

Dress nicely but NOT sluttish. Make sure you speak intelligently, and I would not wear a skirt or dress. If you do then inform you prospective employer that it is not your intention to wear a skirt or dress to work. Slacks or nice jeans. And make sure you know your drinks. I mean in a standard bar you will only need the basics but if your looking at more up-scale then you'll need to know the fancier drinks the uppity ups drink. Good Luck.

Slacks and a nice blouse. You want to look professional without looking too stiff for this particular job. I'd go with an all black ensemble with a punch of color. Like a black blazer and slacks with a light blue top. If you have nice legs, a skirt of decent length wouldn't be too bad. Look cute and laid-back, but professional.

A few years ago I had a interview at a car wash and wore a suit to the interview and because of it the owner hired me as the manager

I was told to wear a tux shirt and black pants. They told me if you look like that, you look like you're ready to get started. I don't know if that's true, but I always got hired right away. If you want though, you could wear a polo and khakis or just something that looks like the uniform, so you kind of match already. Good Luck!

is it a bar or restraunt or night club?? what do the bar tenders wear? dress classy not trashy - like wear a slinky top but with a jacket over it - so you can take it off if you need to - but you dont wanna go in looking like a whore

I agree with the above, it would depend on where the club is, what "type of clients" it attracts. Is it upscale, downscale, a new club? If your not sure, dress NICE and say that you weren't sure what to wear when you show up : ) honesty is always appreciated.
