I like #1, Ceres Consulting. The main reason is that the spelling is easier to remember for clients. Which I think is very big.

It's hard to say, without knowing what type of consulting you do.
But I would avoid #2 and #3, unless you want crank calls that say, "Are you Cereus/Cereos (serious)??"
Be sure to read up on the mythology surrounding Ceres before choosing that.
