"Once Upon a Time in Mexico" actually is the third of the series.
The first is "El Mariachi", the sequel/remake is "Desperado".
Edited to respond to your question: "El Mariachi" is enjoyable, but it's extremely low-budget (certainly no big name stars...but the star of the original does appear as one of Antonio Banderas' cohorts in the sequel). I quite liked it, but it may be more interesting to people who want to see a young filmmaker's admirable first effort.
