Slice it, roll it in bread crums like you would fried chicken and deep fry it. Very good dipped in ranch dressing. It's good in stir fry too.

1-You can cook it in the microwave for quick easy dish...cut it up and put a T. of olive oil, some fresh parsley, garlic, and salt and pepper with a T of water. Microwave for about 3 minutes, stir and then microwave for 2 minutes more...take out and sprinkle with fresh parmesan cheese! 2- Grill it by slicing the long way, brush with olive oil and sprinkle with goya seasoning or seasoned salt, grill until tender. 3- Once you have at lease 3-4 zucchini, grate them and make zucchini bread. Use any basic banana bread recipe but substitute zucchini for bananas! It's great! Good luck!

Chocolate Zucchini Cake was a hit when I was kid and my mom didn't know what to do with all the zucchini our neighbor brought her from his garden. It's good with chocolate icing and if you add a package of chocolate chips, it's extra good. :-)
* 2 cups all-purpose flour
* 2 cups white sugar
* 3/4 cup unsweetened cocoa powder
* 2 teaspoons baking soda
* 1 teaspoon baking powder
* 1/2 teaspoon salt
* 1 teaspoon ground cinnamon
* 4 eggs
* 1 1/2 cups vegetable oil
* 3 cups grated zucchini
* 3/4 cup chopped walnuts (and/or 1 pkg chocolate chips)
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch baking pan.
In a mixing bowl, stir together the flour, sugar, cocoa, baking soda, baking powder, salt and cinnamon. Add the eggs and oil, mix well. Fold in the nuts (or chocolate chips) and zucchini until they are evenly distributed. Pour into the prepared pan.
Bake for 50 to 60 minutes in the preheated oven, until a knife inserted into the center comes out clean. Cool cake completely before frosting.

Be prepared you may get zillions more when you are not looking. You can saute them sliced 1/4-1/8 in thick in a little olive oil with sliced red onion and some roasted garlic,put the onion in first to get it so it will be carmalized by the time the Zucchini is cooked. If you like yours more crunchy than soft watch how long you cook it. You can steam it with one of those collapsable veggie steamers, stainless steel, cheap, put in the bottom of a larger sauce pan and put in about an inch and a 1/2 of H2O.Some people like to pour off the H2O after it is cooked and add a little drizzle of honey and a pad of butter with salt and freshly ground pepper. that's good , but we prefer X-tra sharp cheddar grated over ours when it is hot. You can make zucchini bread, this is a wonderful thing, grate very finely, not the big size; if they don't mention it in the recipe it is important, you can make like a slaw salad with it coarsely grated with one or two carrots....You can slice it and put it on homemade pizza, you can chop it up and add it to spaghetti great addition, or to chicken cachitorri, or really to just about any vegetable soup. My grandma made it in an electric skillet on slow simmer layered with red onions, yellow squash,cheddar and parmesan, sometimes with green,yellow or red sweet peppers.This was great. sometimes she cut corn away from the cob and added it too. You can slice it in 1/2 lengthwise and broil it with some olive oil brushed on the top and parmesan.My husband wants it deep fried in tempura batter with ranch dip... but it is too hot and messy for that !!!!It is great raw with ranch or dill dip sliced like carrot sticks. It is good in Bouillabaise -seafood soup. Some like it stewed with tomatoes and basil. Oh,and you can stuff Zucchini with some Italian seasoned bread crumbs, Italian sausage, and diced zucchini and tomatoes, a little onion and garlic parmesan and olive oil... then roast in the oven at 350 F until done. Slice into any green salad.... add to practically any red sauce dish. It is a fine quiche just get one of those frozen pie crusts beat about 4 eggs with some plain yogurt , 1 cup, put in 1/2 tsp salt , in pie crust put thinly sliced zucchini and red onions on bottom top with 1 1/2 cup of various cheeses: mozzerella, monterey jack and a little swiss and parmesan pour over this the egg mixture. bake at 350 F until set not wiggly but don't overcook. Anyone can cook if they can read a recipe book. Be brave, it's another art form express yourself.!!!!

Oh I am getting hungry jest thinking about it slice um about 3/8 to 1/2 inch wide short side (ROUND) then dip in egg wash then in flower and bread crumbs and deep fry till golden brown then dip in ranch dressing and EAT um up or jest slice as mentioned and steam for about 20 min. till tender add salt & pepper to taste and butter and injoy

Cut it in half length wise, score it with a fork, butter it and put on grated cheese & broil unitl cheese is golden brown !! HHHMMMM!
